And the Turkey Says…”Gobble Gobble!”

Happy Thanksgiving!!!  This year Thanksgiving was easy-going and relaxing.  I did almost all of the cooking the day before, including a breakfast pie that all I had to do was heat up and serve.  Andy’s dad and Mr. Michaels came over bright and early to join us for the holiday weekend…so I dished up the pie, poured us some coffee, and we turned on the Macy’s Thanksgiving day parade.  Davy was very excited about the parade when it started.  They showed a few clips of some of the more famous parade balloons, and he loved it all until the commercials started.  Matty doesn’t quite yet understand the importance of watching the parade in the morning…but soon enough they will both love it all.  Santa finally rolled in at the end, we all waved and cheered…there is nothing more precious than watching the eyes of your children when they are happy and amazed.

Mom and Granny arrived at noon, we heated up some of the food, and it was time to eat.  This was my first time making a holiday turkey and I was quite proud of the way it turned out.  It was a roasted turkey with cider-rosemary gravy.  Dad carved it up and I thought it was delicious.

After dinner, we all enjoyed some pumpkin pie with a cup a coffee while the “Give Thanks” book was passed around.  We had started the book a couple of years ago and meant to write in it every year…but somehow it had been misplaced until recently.  I look forward to filling the book over the years with special thanks from all of us…including my beautiful boys.

Happy Halloween 2010!!!

It is finally here!!  Happy Halloween!!!  The boys were so excited all weekend that they were going to get to go trick-or-treating.  This year the neighborhood started off Halloween weekend with an organized block party on Saturday night the 30th.  Over on the bridge to the village they set up the annual haunted house, so this seemed to be the perfect location.  There were two bounce houses, tables and tables of pot luck food brought out, a bon-fire, and the Trimble’s projected the Wizard of Oz onto the side of the their house for movies on the lawn.  The kids got to dress up in their costumes and they had a great time.  There must have been at least 100 people who came out for the party.   By the end of the evening we ended up in front of the Nugent’s home roasting marshmallows and making smores.

This year for Halloween, Davy decided that he wanted to be an astronaut and Matty we dressed as Mickey mouse.  Davy loved his costume and wore it for days… Matty surprisingly loved his too.  He was just as proud of his costume.  He got a little frustrated that he couldn’t get his gloves to stay on, but he wore his Mickey ears, which squeaked, the entire night.

Mom, Courtney, Andy’s Dad, and Mr. Michaels all came over to see the boys and to spend some time with us.  For dinner Andy grilled hot dogs and hamburgers for everyone, including Colin and Connor.  It was a perfect, delicious dinner before we headed out to get some candy.  Colin and Connor dressed up as the Mario Brothers and Emma was a ballerina.

Carving Our Pumpkins 2010

This year we had a carving party…  Brittany and her aunt Andrea came over from next door, Davy, and I spread out on the floor and dug in…literally…  :O)  I bought a pumpkin carving book from Michael’s and each of us picked out a fun face.  Davy wanted his to be scary, so with my assistance we carved three sculls into his and  Andy wanted his to be fun and simple.

Picking Out Pumpkins at the Pumpkin Patch!

Off to the Pumpkin Patch we go….  For the last two years we have gone on over to the Boy Scouts Pumpkin Patch on the corner of Linebaugh and Sheldon.  The selection is huge, prices are decent, and we knew that the boys would have a great time running up and down the pumpkin isles.   They have big ones, small ones, orange green and white ones, bumpy and smooth ones…and in the end…one for everyone…  :O)

Wk 3 – The Chipotle Burger : The Cuban Burger

It’s Memorial Day today, and nothing says summer holiday more than an outdoor BBQ.  Andy fired up the grill, threw on some hot dogs and burgers, and pulled out this month’s issue of the Food Network Magazine.  This issue featured 50 different burger recipes.  The one that Andy picked to try was the Chipotle Burger and then we got creative and came up with the Cuban Burger.  These were easy, cheap, and creative ways to break away from the original Hamburger.

Tip:  When grilling the burgers don’t flatten them with a spatula to try to get them to cook faster, they will lose their juices and flavoring…instead put the grill on medium heat and show some patience.

The Chipotle Burger:

  • Grilled burger
  • 2 slices of Jack cheese
  • Chipotle mayonnaise (mix 1/4 cup mayo, 1 Tbl minced chipotles in adobo and a splash of lemon juice
  • Avocado slices
  • Served on a bun

The Cuban Burger:

  • Grilled burger in the shape of a rectangle
  • Swiss cheese
  • Cilantro & Scallion Mayonnaise (mix 1/3 cup mayo, 1 Tbl scallions, 1 Tbl cilantro in a food processor)
  • Tomato
  • Onion
  • Served on Toasted Cuban Bread
