Davys First Little League Game

After a full day of rain, we received word from Keystone Little League that our game was a go!  Davy’s first game!  They played the Red Sox and all of the children had so much fun.  They played three full innings and  Davy played second base, out field, and pitcher.  He successfully hit the ball each time at bat, I video recorded the first at bat :), and brought his entire team in at the end of the second.  Way to go Davy!

A Day At The Beach With Matty

Some days I just need to spend a little one on one time with one of my love bugs.  Matty skipped preschool today to spend the day with me at Fort De Soto Beach.  We picked up lunch at Subway in Terra Verde and picnicked at the playground on the North Beach.  Matty ran and played.  He even made friends with a man by the name of Mr. Martin who was fishing for speckled trout.  Matty showed him how well he swims and the man showed him his ‘live shrimp’ and fish when he caught them.  We had so much fun and of course the weather was beautiful…love him!

Argggh! Its a Pirate Invasion…

This year we decided to take it easy for Gasparilla and we drove down right before the parade started.  We parked at the corner of Morrison and Armenia, loaded the kids up in the wagon, and wandered down to Bayshore and hunted a place to set up.   There were some nice people who let the kids down on the fence and they were challenged to get 100 strings of beads and then in return they would be rewarded with light up wands.  During the break between the parade and the fireworks we took the kids to Bella’s for dinner.  The pasta and salad were delicious.  The evening ended with beautiful fireworks and a bunch of very tired kids.  It was a great day… 🙂

Christmas Eve Party 2011

Christmas Eve 2011…it has finally arrived!   After months of planning and sending messages to Santa, the wait is almost over…  Davy and Andy asked if we could have another party this year and since Eve is on Saturday…I said ‘why not!’ 🙂  Here is Andy hanging out in the ‘man room’ with Brandie’s dad, Brain, Mark, and Garrett.

This year we decided to make the party pot-luck…everyone brought a dish or two.  Here the table is starting to fill up.  We eventually ran out of room in the dining room and ended up filling up the kitchen too!

Happy 6th Birthday Davy!!!

Our little boy turns 6 today!!!  Davy woke up this morning to find a big present in his bed…a new Razor scooter.  Since his party is Phineas and Ferb, it just seemed so fitting to buy a themed scooter for him.  The scooter was the perfect gift because in the last couple of weeks he has picked up riding the scooter more and more, and his old one was rusted from being left outside over night.  Matty also thought of a gift for Davy, a new battery for his Jeep.  The two of them hopped in and took off down the driveway this morning…so cute.  For breakfast I made him chocolate chip pancakes and sent him to school with a full belly.

Although we celebrated at school yesterday and his party is coming up this weekend, I didn’t want his actual day to be too overlooked…so I asked him what he wanted to do and he said, “Oh, I know…how about a Root Beer Float Party!”  That we can do.  After dinner we invited the neighbors over and sang ‘Happy Birthday’ to our beautiful boy… So proud of him!

Ham Jambalaya

This article was written for the JLT Cookbook Blog…

When I first found out that I was going to be tasting and writing about the recipe Ham Jambalaya I was so excited because what immediately came to my mind was one-pot dinner. After working all day, picking up two kids from different schools, and trying to have dinner on the table for them and my husband by six, an easy recipe for dinner is always what I am looking for.

When I think of southern or Cajun jambalaya I think: chicken, shrimp, sausage, ham, bell peppers, onions, tomatoes, celery…you know hearty and full of meats, vegetables, and rice; and as I jotted down the recipe at the end of the day before I ran into Publix, I knew with a sinking feeling that the dinner that I had planned on was not going to be enough food for them.

My intention is not to give this recipe a bad review, it is more for us to sit back and say, “Yeah, sometimes the recipes we pick don’t go as planned or taste like we would want them too…but that’s ok.” We learn through trial and error and they can’t all be perfect, right?

What this dish really consists of is 2 cooking onions, 2 cups of canned tomatoes, 1 cup of rice, and 1 cup of ham. Now if you do the math that is just a little over 4 cups. I put a scoop onto each of my kid’s plate and what you see in the bowl is all that was left for my husband and me. I ended up having to make each of them a salad, threw in some buttered bread, a big glass of milk, and then dessert. My husband ate what I served him and then proceeded to dig around in the refrigerator for more food.

The overwhelming ingredient in this dish is the canned tomatoes. If you love canned tomatoes, then you’ll love this dish. If you don’t, then most likely you won’t. We prefer fresh in our house. Canned tomatoes just have this distinct taste and it doesn’t matter how long you sauté them or what you sauté them in, they have a tendency to overpower the other flavors of the dish. Aside from this, my husband and I probably would have liked it more if more bacon was called for. In addition to using the grease, crumbling and adding the bacon to the dish would also add a little extra flavor to it. I also didn’t see the need to bake the dish for 30-40 minutes. If you simmered down the tomatoes, most of the liquid should be gone, so I am not sure what the extra time was needed for. I tasted it before and after the baking and to me it was exactly the same.

My kids loved this dish. If you have children and they eat rice, it was easy to make and I am certain that they will love it too.

It says 4-6 servings, and as a side dish then yes, I would agree to that. I don’t really have any recommendations as where to serve this dish; maybe at a potluck get together where there are a lot of different dishes to sample and taste. As for a dinner, we like to focus around protein and vegetables. The little bit of ham that it calls for was not enough for us, so it needs a complimentary meat as well as another vegetable or salad.

Keep in mind after reading this that not every recipe is for everyone. If you love these ingredients, then by all means cook away…you won’t be disappointed. As for us…I’ll be waiting for my next assignment… Bon Appétit!

Ham Jambalaya (The Gasparilla Cookbook, p. 111)

  • 2 slices of bacon
  • ½ clove garlic
  • 2 onions, finely chopped
  • 2 cups canned tomatoes
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons Worcestershire sauce
  • 1 cup cooked rice
  • 1 cup chopped or ground ham, ground preferred

Fry bacon until crisp. Remove from skillet and drain. Saute garlic and onion in bacon drippings. Add tomatoes and parsley. Season with salt, pepper, and Worcestershire sauce. Simmer 15 minutes. Add rice and ham and mix well. Bake in casserole in 350 degree oven for 30-40 minutes. Serves 4-6.

Mattys First Trip to Disney World

For the boys birthdays this year, the Elf of the Shelf brought them tickets to Disney World. Matty’s first trip to see Mickey Mouse. He was so excited, had a wonderful day, and keeps asking when we are going to go back!

Happy 3d Birthday To You Matty Bear

Matty found a Mickey Pirate Ship in his bed this morning when he woke up, and both of the boys were up bright and early playing…  Andy and I climbed out of bed and greeted them with smiles.  We sang Happy Birthday and I pulled out the pan to make him a big plate of chocolate chip pancakes.  These pancakes are special for the boys because we don’t usually give them chocolate for breakfast, I love to watch them squeal with delight.

Next up, Matty had his doctor’s appointment.  He weighed in at 34 pounds and is 38.5 inches tall.  He is a healthy boy.  Afterwards, I took him to two different parks to play.  He loves to play outside.

I asked him what he wanted for his birthday night, and he asked for brownies.  So with our hats on and our friends all here…we sang to Matty bear and watched him blow out his candle…  Here’s to number 3!  Love you baby!
