Oatmeal Scotchies for the Cookie Extravaganza

Every year the Berkeley parents come together to say “Thank you” to the teachers and staff by having a Cookie Extravaganza. 

The request is for volunteers to bake six dozen cookies and to make anything other than chocolate chip.  So, we decided to make Oatmeal Scotchies.  Of  course I had to enlist my little chef to help me, he loves to cook and this is a perfect way for him to say “Thank you” to Mrs. Fruit, Ms. Michiel’s, and his other teachers….

 

Oatmeal Scotchies

  • 1 cup unsalted butter chopped
  • 3/4 cup sugar
  • 3/4 cup brown sugar, firmly packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 cups rolled oats (I use Quaker Old Fashioned, do not use instant)
  • 1 package of butterscotch chips

Adjust oven rack to middle position and heat oven to 375 degrees.

In bowl of electric mixer or by hand, beat butter until creamy.  Add sugars; beat until fluffy, about 3 minutes.  Beat in eggs and vanilla; beat until well combined.

In a separate bowl combine flour, baking soda, salt and cinnamon.  Gradually mix into butter mixture with wooden spoon or large rubber spatula until just combined.  Stir in oats and butterscotch chips.

Drop the dough by heaped tablespoons onto ungreased baking sheet, leaving at least a 2 inch gap between each mound.  Place one baking sheet at a time onto center rack of preheated 375 degree oven.  For softer chewy cookies; bake until very lightly browned, about 7 to 8 minutes.  For crisper cookies; bake until golden brown, about 9-10 minutes.  Cool on a baking sheet for at least two minutes before transferring to a place to finish cooling. 

(I found that in my oven the cookies were the best at around 8 1/2 minutes. )

Makes about 48 cookies.

To make bar Cookies:  grease a 10×15 inch jelly roll pan.  Spread cookie dough in prepared pan.  Bake until light golden brown, about 18-22 minutes.  Cool completely in pan on a wire rack before cutting into bars.

Store cookies in an airtight container at room temperature for up to one week.  Cookies freeze well.

Wk 29 – Oatmeal Scotchies

Every year the parents at Berkeley host a Cookie Extravaganza for the teachers and staff.  It is a way for us to come together and say “Thank you”.  So tomorrow morning in the car line we will pull up along with dozens of other parents to drop off our wonderful homemade cookies (all 6 dozen of them) which will then be transported to the Aye Arboretum.  We hope that they will enjoy them….

Our Pump-It-Up Birthday Party

This year we decided to do one really large birthday party for the boys at Pump-It-Up, a warehouse that is filled with all different types of jump houses.  I let Davy decided where he wanted the party, and as I listed off the different places such as:  movie theater, bowling alley, the house… and then Pump-It-Up, his face just lit up and he says, “Mama, can we really have my party at Pump-It-Up??!!!”  How can you say no to that?  So that’s it.  As easy as that.  As for the theme, he originally wanted rockets and space, but somewhere along the way he decided that he wanted it to be pirates again.  And to be honest, pirate party favors are a lot easier to get than rockets…  :O)

The boys had a really good turn out of kids to their party.  There were old friends, new friends, school friends, and neighborhood friends.  We were excited for them.

After the party was over we went home, the boys took a much-needed rest, and then we opened the presents!  There were so many and I was so involved helping them and writing down who gave us what…that I forgot to take a few pictures.  Oh well…  :O)  Jamison and Molina came over to play with the new toys and for dinner we all went over to the new burger joint, Burger 21.  The kids loved their dinner and even more so they loved their milkshakes!!!

December Daily 2010

I am so very excited to start this new tradition of creating a small keepsake scrapbook for the month of December.  Kelly who has been a huge fan of Ali Edwards for quite some time now decided for us that this was a must do project.  Now, Ali has made one of these each December for the last couple of years and I love the idea of making it a tradition to unpack them from the holiday totes, sit down with Andy and the kids, and flip through each year to see all of the fun things that we did on a day to day basis during the holiday’s. 

My December Daily book this year will contain the fun stuff that we do each day as well as Advent Action cards.  I am stealing some of her ideas because I just can’t help myself…I love them!  I will do a separate post on these later, but in the mean time here are the daily pockets that I have been making…

I do believe that most people will stop at day 25, Christmas Day… we however love the entire month of December so I will be doing all 31.  Stay tuned and be on the look out for my day to day pages…they will be perfect for us!

“Oh Christmas Tree, Oh Christmas Tree….”

It is the day after Thanksgiving… our Elf has arrived bringing pj’s and the Polar Express, the turkey decorations are down, the house has been cleaned and rearranged, the totes have been pulled from the garage, and that could only mean one thing….  IT’S CHRISTMAS TIME!!!

All year-long we patiently wait for the holiday season to return and once it gets here we can’t wait to let the celebration begin.  Our tradition is to go and pick out our Christmas tree the day after Thanksgiving, that way we can enjoy it usually for a full four weeks.  Also, by getting it on Friday we have all weekend to decorate it.

This year we decided to go to the new lot located next to the village in Westchase.  Since it is still early, we knew that we would get to pick one of the best trees on the lot.  Davy was so excited to go and get our tree, Matty was just excited to be out and about.  We all put on our santa hats and ran into the lot.  We wandered through and around the trees and then all of a sudden Andy and I come to a complete stop, look at the same tree, and said…”Yep, that’s it!”  I love the feeling that you get when you just know something is right.  The guy loaded it up onto the truck and we headed home.  This year we decided to move the tree from the Man room to the Family room.  I think I’m gonna like it here….

The first thing I do to the tree is wrap white lights around the trunk to light up the tree from the inside out.  We found a present in our tree…a bird’s nest.  I was happy that there weren’t any eggs in it or even worse a bird, how funny would it have been it all of a sudden a mad, crazy bird flew out at me in the house…  :O)

Here are the boys dancing and jumping around our newly finished decorated tree.  We peeked at our day 1 Advent Action card…it was to go out and buy a new ornament for the new tree…

Wk 28 – Roast Turkey with Cider-Rosemary Gravy

This year for Thanksgiving, I was given the pleasure of cooking the family turkey.  After looking at several recipes…here’s the one that I decided on.  The flavor was delicious and Andy loved the added touch of the bacon.

Roast Turkey with Cider-Rosemary Gravy

  • 1 16-pound fresh or frozen turkey, thawed
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 large onion, coarsely chopped
  • 2 celery ribs, coarsely chopped
  • 1 Golden delicious apple, coarsely chopped
  • 3 fresh rosemary sprigs
  • 2 Tablespoons butter, softened
  • 6 center-cut bacon slices
  • 1 1/4 cups apple cider, divided
  • 2 tablespoons finely chopped onion
  • 1 garlic clove, minced
  • 2 teaspoons minced fresh rosemary
  • 2 Tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Garnish: rosemary sprigs

Remove giblets and neck, and rinse turkey with cold water; pat dry.  Sprinkle cavity with 1 teaspoon salt and 1 teaspoon pepper.  Place turkey, breast side up, in a roasting pan.  lightly stuff turkey body cavity with coarsely chopped onion, celery, apple, and 3 rosemary sprigs.  Rub turkey with butter.

Loosen skin from turkey breast without totally detaching skin; carefully slip bacon slices under skin.  Replace skin, using wooden picks to fasten skin over breast meat.  Tie ends of legs together with heavy string, or tuck under flap of skin.  Lift wing tips up and over back, and tuck under bird.  Pour 3/4 cup apple cider over turkey.

Bake turkey, uncovered, at 450 degrees for 20 minutes.  Reduce heat to 350 degrees, bake 2 hours and 45 minutes or until a meat thermometer inserted into meaty part of thigh registers 180 degrees, basting often with pan juices.  Shield turkey with heavy-duty aluminum foil during cooking, if necessary, to prevent over browning.

Transfer turkey to a serving platter; cover loosely with foil.  Scrape roasting pan to remove browned bits; pour pan drippings into a gravy separator.  Discard fat, reserving 2 tablespoons.

heat reserved 2 tablespoons fat in a small saucepan over medium-high heat.  Add finely chopped onion, garlic, and 2 teaspoons rosemary; saute 2 minutes or until tender.  Reduce heat to medium; add flour, and cook 1 minute.  Whisk in pan drippings and remaining 1/2 cup cider.  Bring to a boil; reduce heat, and simmer 2 to 3 minutes or until gravy thickens.  Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper.  Serve gravy with turkey.  Garnish if desired.

Note: For ease in removing hot turkey from roasting pan, wear clean heat-resistant rubber gloves.  They shield the heat and enable you to get a firm grip on the bird.

And the Turkey Says…”Gobble Gobble!”

Happy Thanksgiving!!!  This year Thanksgiving was easy-going and relaxing.  I did almost all of the cooking the day before, including a breakfast pie that all I had to do was heat up and serve.  Andy’s dad and Mr. Michaels came over bright and early to join us for the holiday weekend…so I dished up the pie, poured us some coffee, and we turned on the Macy’s Thanksgiving day parade.  Davy was very excited about the parade when it started.  They showed a few clips of some of the more famous parade balloons, and he loved it all until the commercials started.  Matty doesn’t quite yet understand the importance of watching the parade in the morning…but soon enough they will both love it all.  Santa finally rolled in at the end, we all waved and cheered…there is nothing more precious than watching the eyes of your children when they are happy and amazed.

Mom and Granny arrived at noon, we heated up some of the food, and it was time to eat.  This was my first time making a holiday turkey and I was quite proud of the way it turned out.  It was a roasted turkey with cider-rosemary gravy.  Dad carved it up and I thought it was delicious.

After dinner, we all enjoyed some pumpkin pie with a cup a coffee while the “Give Thanks” book was passed around.  We had started the book a couple of years ago and meant to write in it every year…but somehow it had been misplaced until recently.  I look forward to filling the book over the years with special thanks from all of us…including my beautiful boys.

Wk 27 – Overnight Breakfast Pie

My husband and father-in-law tested out this recipe for me and gave it rave reviews.  Both agreed that it reminded them of Quiche, but that they really liked the potatoes in it.  Since this recipe is so easy and can be made the night before…it just might have to fall into our holiday morning rotation.  Afterall, who wants to cook first thing in the morning on a holiday???  :O)

Overnight Breakfast Pie

  • 8 slices of bacon
  • 1/2 cup panko bread crumbs
  • 5 eggs
  • 2 1/2 cups frozen shredded hash brown potatoes
  • 1 cup shredded Swiss cheese (4 ounces)
  • 1/2 cup cottage cheese
  • 1/3 cup milk
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 drops bottles hot pepper sauce
  • sliced green onions (optional)

In a large skillet, cook bacon over medium heat until crisp.  Drain bacon on paper towels, reserving 1 tablespoon drippings in skillet.  Crumble bacon; set aside.  Stir bread crumbs into the reserved drippings.  Transfer to a small bowl; cover and chill until needed.

Lightly grease a 9-inch pie plate; set aside.  In a medium bowl, beat eggs with a fork until foamy.  Stir in crumbled bacon, hash brown potatoes, Swiss cheese, cottage cheese, milk, 1/4 cup green onions, salt, black pepper, and hot pepper sauce.  Pour mixture into prepared pie plate.  Cover and chill for 2 to 24 hours.

Sprinkle pie with bread crumb mixture.  Bake, uncovered, in a preheated 325 degree oven for about 50 minutes or until a knife inserted in the center comes out clean.  If desired, sprinkle pie with additional green onions.  Makes 4 to 6 slices.

Matty’s Birthday Breakfast…

The birthday tradition that we have in our house is:  every year when the boys wake up they find a present in their bed, we hear them over the monitor, and then shortly after we barge in to their room and sing “Happy Birthday to You!!!”  You can see here that we surprised poor Matty and he was confused as to what we were doing….

This year Matty’s gift was Chuck the Truck!  He rumbles and talks when you push different buttons…

For Matty’s Birthday Breakfast, I made him banana pancakes covered with strawberries and whipped cream!  Yum Yum!!

Happy 2nd Birthday Matty Bear!!!

To kick off Matty’s 2nd birthday, we surprised him with a party in his classroom at school today, November 15th.  After looking at our schedules, we decided that we would be able to give Matty more birthday time if we started the day before rather than just on his actual birthday.  When it came to deciding what theme the party would be, it was between Mickey and trains; and since he was Mickey for Halloween…this was the perfect opportunity to shine something else that he loves.  Granny, Andy, Davy, and I all show up to his classroom with cupcakes, snacks, and balloons for everyone… he was so happy to see all of us.  The class sang him happy birthday and he just beamed with smiles.

After we left the school, we headed home and again surprised Matty with Thomas decorations, a big homemade cake, and a giant singing Thomas balloon.  Davy immediately ran and gave him a big hug when we got home.

Now of course we couldn’t wait until after the cake to give him his presents…sooo…  From mom and dad he got his first big boy bike, from Davy a Cars helmet, from Papa a Little Peoples Car Garage, and from Granny the Slinky dog from the movie Toy Story (it looks like Maggie).

After presents were opened, Andy cooked up one of Matty’s favorite meals: grilled hot dogs, cheese puffs, chips, and strawberries.  I took down the baby swing off of the swing set, and put up a lowered big boy swing just for Matty.

Kelly and the kids came over to help us sing Happy Birthday to Matty and eat cake.  I was so proud of Matty.  He wanted to wear the hat and he actually blew out his own candles.  Such a sweet boy.

Off to bed Matty goes in his new birthday Thomas jammies….  Can’t wait to wake up and sing to you tomorrow morning birthday boy….  :O)
